- 20 oz ( 1 ¼ lbs ) boneless, skinless chicken breasts
- 2 tbsp all-purpose flour
- ½ tsp dried oregano
- ½ tsp dried basil
- ½ tsp sweet paprika
- ½ tsp salt
- freshly ground pepper to taste
- 1 tbsp olive oil
- 3 tbsp unsalted butter, divided
- 3 garlic cloves, minced
- 2 tbsp parsley, freshly chopped
Instructions
- Dry the chicken breasts with a paper towel and cut them into 1-inch pieces.
- In a bowl, season the chicken with flour, basil, paprika, oregano, salt, and pepper, tossing until fully coated.
- Heat a large cast iron skillet over medium-high heat, adding olive oil and 1 tbsp of butter. When hot, add the chicken pieces in one layer.
- Cook the chicken without moving for about 3 minutes. Flip and cook for an additional 2 minutes.
- Incorporate the remaining butter, minced garlic, and parsley. Cook for one more minute until the chicken is fully done.
- Serve immediately while hot, accompanied by sides like rice, pasta, or a fresh salad.
Notes
For extra flavor, let the chicken marinate with the spices for 30 minutes before cooking.
