- 1 ½ pounds Brussels Sprouts, cleaned, trimmed, and halved
- 2 tablespoons Extra Virgin Olive Oil
- 1 teaspoon Kosher Salt
- ¼ teaspoon Black Pepper
- 1 pound thick-cut Bacon
- 2 large Yellow Onions, finely chopped
- 2 large Shallots, diced
- 2 teaspoons minced Garlic
- ½ cup packed Light Brown Sugar
- ¼ cup Maple Syrup
- â…“ cup Apple Cider Vinegar
- 1 teaspoon Chili Powder (optional)
Instructions
- Preheat the oven to 450°F and prepare a baking sheet with parchment paper.
- Toss Brussels sprouts with olive oil, salt, and pepper, then spread in a single layer on the baking sheet.
- Roast Brussels sprouts for 20-25 minutes until tender and golden brown.
- While roasting, cook diced bacon in a skillet until crispy; drain and set aside.
- Leave some bacon grease in the skillet, add onions and shallots, and cook until caramelized.
- Add garlic, brown sugar, maple syrup, vinegar, chili powder, and the crispy bacon; simmer for 5 minutes.
- Combine roasted Brussels sprouts with the bacon jam in the skillet; warm through before serving.
Notes
Don’t overcrowd the baking sheet to ensure even roasting.
Store leftovers in an airtight container for up to 3 days, or freeze for up to 3 months.
