Description

This Beef Burrito brings irresistible flavors and a quick prep time, featuring lean ground beef, black beans, and cheese in a warm tortilla—ideal for a comforting and homemade dinner.


Ingredients

  • 1 tablespoon canola oil or neutral cooking oil of choice
  • 1 pound lean ground beef
  • 1 ½ teaspoons chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • ¾ teaspoon kosher salt
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • 1 small yellow or white onion (¼-inch diced)
  • 1 (15-ounce) can reduced-sodium black beans, rinsed and drained
  • 1 cup prepared salsa
  • 6 burrito-size flour tortillas (about 10 inches)
  • 2 cups (8 ounces) shredded Monterey Jack, sharp cheddar, or Mexican blend cheese
  • Sour cream
  • Avocado
  • Hot sauce
  • Chopped fresh cilantro

Instructions

  1. Heat the oil in a large skillet over medium-high heat. Swirl to coat the pan, then add the beef, pressing it into a 1/2-inch thickness. Let it sizzle for 3 to 4 minutes.
  2. Sprinkle in the chili powder, oregano, cumin, salt, garlic powder, and smoked paprika. Add the diced onion on top and break the meat apart using a spoon or spatula. Cook until thoroughly browned, about 4 more minutes.
  3. Mix in the beans and salsa, cooking until most of the liquid has evaporated and beans are warm, about 1 minute. Adjust seasoning as needed.
  4. To assemble, place a tortilla on the surface, add 3 tablespoons of cheese in the center, followed by 2/3 cup of the beef mixture, and more cheese on top.
  5. Fold in the edges of the tortilla, then roll it up from one end to secure the filling. Repeat with the remaining tortillas.
  6. For serving, heat a nonstick skillet over medium heat. Cook the burrito seam-side down until golden on both sides, about 1 to 2 minutes each. Serve warm with toppings.

Notes

Feel free to customize with toppings like sour cream, avocado, hot sauce, or chopped cilantro.
You can use ground turkey or chicken as a substitute for beef if preferred.
