- 4 large eggs
- 1 cup vegetable oil
- 2 cups granulated sugar
- 2.5 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 14 ounces sweetened condensed milk (one 14 oz can)
- 3 tablespoons unsweetened cocoa powder
- 2 tablespoons unsalted butter
- 1/3 cup evaporated milk
- 1/3 cup dark chocolate chips

Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan and set aside.
- Blend the chopped carrots, eggs, vegetable oil, and sugar in a blender until smooth and bright orange.
- In a large bowl, whisk together the flour, baking powder, and salt.
- Pour the blended carrot mixture into the dry ingredients and fold until just combined.
- Pour the batter into the greased baking pan and bake for 24-28 minutes or until a toothpick comes out clean.
- In a saucepan, combine the sweetened condensed milk, cocoa powder, and butter over medium heat, stirring until smooth and slightly thickened.
- Stir in the evaporated milk and simmer for an additional 2-3 minutes until the glaze coats the back of a spoon.
- Remove from heat and mix in dark chocolate chips until melted and smooth.
- Cool the cake in the pan for about 10 minutes, then pour the warm glaze over it, spreading evenly and adding chocolate sprinkles on top.
- Allow the cake to cool completely before slicing.
Notes
For a more intense chocolate flavor, add more cocoa powder to the glaze.
