Description

These Burger Bowls with Chipotle Ranch Sweet Potato Fries are packed with irresistible flavors. Quick to prepare, this comforting dinner features ground beef, zesty chipotle ranch, and deliciously crispy sweet potato fries. Perfect for a family meal!


Ingredients

  • ½ cup sour cream (or plain Greek yogurt)
  • â…“ cup mayonnaise
  • ¼ cup buttermilk
  • 2 chipotle peppers in adobo sauce
  • 1 teaspoon garlic paste
  • 2 teaspoons Sazon seasoning
  • 2 teaspoons dried parsley
  • Kosher salt & fresh ground black pepper- to taste
  • 3 medium sweet potatoes, cleaned (pat dry) & sliced into wedges
  • 3 tablespoons olive oil, divided
  • 2 ½ tablespoons Creole Cajun Seasoning– homemade or store-bought, divided
  • 1 lb ground beef
  • ½ medium yellow onion, diced
  • â…“ cup beef broth (or water as sub)
  • For bowl assembly: Chopped romaine lettuce, halved cherry tomatoes, thinly sliced red onion, hamburger dill chips, and sliced avocado- as desired

Instructions

  1. Combine sour cream, mayonnaise, buttermilk, chipotle peppers, garlic paste, Sazon seasoning, parsley, salt, and pepper in a blender until smooth. Store in the refrigerator.
  2. Preheat the oven to 425°F and prepare a baking sheet with foil and a wire rack.
  3. Mix sweet potato wedges, 2 tablespoons of olive oil, and Cajun seasoning in a large bowl until fully coated. Spread on the baking sheet.
  4. Bake sweet potato wedges for 40 minutes or until fork-tender and crispy.
  5. Heat 1 tablespoon of olive oil in a skillet. Add ground beef and cook until browned, breaking it up as it cooks. Add onion and cook until translucent, about 3-4 minutes. Add remaining Cajun seasoning and beef broth; let simmer until most liquid is absorbed.
  6. Assemble bowls with a base of romaine lettuce and sweet potato wedges, then add ground beef and toppings. Drizzle with chipotle ranch and enjoy.

Notes

For a healthier option, swap sour cream with plain Greek yogurt.
Adjust the spice level by adding more or fewer chipotle peppers based on preference.
