- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 3 cloves fresh garlic
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp salt
- 1/2 tsp black pepper
- 4 cups fresh spinach
- 8 oz button or cremini mushrooms
- 2 tbsp butter
- 4 oz cream cheese
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 1/2 cup chicken broth
Instructions
- Preheat oven to 375°F (190°C). Season chicken breasts with salt, pepper, thyme, oregano, and basil.
- Heat olive oil in a skillet and sear chicken on both sides for 2-3 minutes until golden brown. Remove chicken from skillet.
- Melt butter in the same skillet and sauté sliced mushrooms and minced garlic for 5-7 minutes until golden.
- Add spinach and stir until wilted.
- In a bowl, mix cream cheese, heavy cream, Parmesan cheese, and chicken broth until smooth. Season as desired.
- Transfer mushroom and spinach mix to a baking dish. Place chicken on top and pour creamy sauce over.
- Bake uncovered for 20-25 minutes until chicken reaches 165°F (74°C). Optionally broil for 2-3 minutes for a golden finish.
- Let rest for 5 minutes before serving.
Notes
Chicken breasts should be around 6-8 oz each for best texture.
Use low-sodium chicken broth to control saltiness.
Allow leftovers to cool before storing in an airtight container; will last up to 4 days in the fridge.
