Description

This Chicken Spinach Mushroom Low Carb Oven Dish is a creamy, flavorful delight featuring juicy chicken, tender mushrooms, and fresh spinach—perfect for healthy, quick dinners!


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 3 cloves fresh garlic
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 cups fresh spinach
  • 8 oz button or cremini mushrooms
  • 2 tbsp butter
  • 4 oz cream cheese
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 cup chicken broth

Instructions

  • Preheat oven to 375°F (190°C). Season chicken breasts with salt, pepper, thyme, oregano, and basil.
  • Heat olive oil in a skillet and sear chicken on both sides for 2-3 minutes until golden brown. Remove chicken from skillet.
  • Melt butter in the same skillet and sauté sliced mushrooms and minced garlic for 5-7 minutes until golden.
  • Add spinach and stir until wilted.
  • In a bowl, mix cream cheese, heavy cream, Parmesan cheese, and chicken broth until smooth. Season as desired.
  • Transfer mushroom and spinach mix to a baking dish. Place chicken on top and pour creamy sauce over.
  • Bake uncovered for 20-25 minutes until chicken reaches 165°F (74°C). Optionally broil for 2-3 minutes for a golden finish.
  • Let rest for 5 minutes before serving.

Notes

Chicken breasts should be around 6-8 oz each for best texture.
Use low-sodium chicken broth to control saltiness.
Allow leftovers to cool before storing in an airtight container; will last up to 4 days in the fridge.
