Chili Lime Roasted Cauliflower is a delicious and easy dish, featuring crispy cauliflower florets seasoned with chipotle powder and fresh lime juice. Perfect for weeknight dinners or a healthy side!

- 1 large head cauliflower, cut into florets
- 2 garlic cloves, minced
- 2.5 tbsp extra virgin olive oil
- 1.5 tsp chipotle powder (more or less for spiciness!)
- 3/4 tsp salt
- 1/2 tsp black pepper
- 1 tbsp lime juice (1 medium to large lime)
- 1 tbsp coriander/cilantro leaves, finely chopped (optional, sub parsley or chives)
Instructions
- Preheat the oven to 200°C/390°F.
- In a large bowl, combine the cauliflower florets with olive oil and minced garlic. Mix well with your hands to ensure the cauliflower is coated.
- Add the chipotle powder, salt, and black pepper, then toss to coat evenly.
- Spread the cauliflower on a baking tray and bake for 25 minutes, turning once, until the edges are caramelized and the cauliflower is tender.
- Remove from the oven, push the cauliflower together, and drizzle with lime juice.
- Sprinkle with chopped coriander and serve hot.
Notes
Adjust the amount of chipotle powder based on your spice preference.
For a fresh twist, substitute coriander with parsley or chives.
This dish pairs well with grilled meats or as a healthy snack.
