Ingredients

  • 16 oz cranberries (fresh or frozen)
  • 1 cup granulated sugar (for topping)
  • 1 tsp vanilla extract (for topping)
  • 2 ½ cups graham cracker crumbs
  • 9 tbsp unsalted butter (melted)
  • ¼ cup light brown sugar
  • 32 oz full-fat cream cheese (24 oz for filling, 8 oz for whipped topping)
  • 2 eggs (room temperature)
  • 2 tbsp sour cream
  • 1 vanilla bean (scraped)
  • 1 ¾ cups heavy whipping cream (¾ cup for filling, 1 ½ cups for whipped topping)
  • 2 tbsp cornstarch
  • 6 oz white chocolate chips (melted)
  • Optional white chocolate bar (for topping)

Instructions

  • Preheat your oven to 325°F (165°C) and prepare a 9×13-inch baking dish with parchment paper.
  • Combine cranberries, 1 cup sugar, and 1 tsp vanilla extract in a saucepan and cook until cranberries pop (about 10 minutes). Let cool.
  • Mix graham cracker crumbs, melted butter, and brown sugar in a bowl until it resembles wet sand. Press into the bottom of the prepared pan and bake for 10 minutes.
  • Beat cream cheese, ½ cup sugar, 2 eggs, sour cream, and vanilla bean seeds in a bowl until smooth.
  • Gradually mix in heavy cream and cornstarch until combined. Fold in melted white chocolate.
  • Spread cheesecake mixture over the crust. Bake for 30-40 minutes until set. Cool for 1 hour in the pan then chill for at least 4 hours in the fridge.
  • Top with cranberry sauce before serving, and optionally garnish with shaved white chocolate.

Notes

For best results, use room-temperature ingredients to ensure a smooth filling.
Chilling the bars overnight enhances the flavors well.
Avoid overmixing the filling once the eggs are added to prevent cracking.
