Description

Enjoy the delightful combination of Circus Animal Cookies and Rice Krispie Treats in this easy, fun dessert. With a blend of colorful sprinkles and white chocolate, these treats are perfect for parties and satisfying snacks!


Ingredients

  • circus animal cookies – 9 ounces
  • mini marshmallows – 10 ounces
  • rice krispies cereal – 6 cups
  • unsalted butter – 4 tablespoons
  • multi-colored nonpareils – 3 tablespoons
  • colored sprinkles – 3 tablespoons
  • white chocolate chips – 1/2 cup
  • red food coloring – 1-2 drops
  • heavy cream (optional) – 1/2 teaspoon

Instructions

  • Grease a 9×13-inch baking dish with cooking spray.
  • Pulse the circus animal cookies in a food processor until they're a mix of crumbs and small pieces. Reserve 1/2 cup for topping.
  • In a large pot over low heat, melt the butter and mini marshmallows while stirring constantly until smooth.
  • Remove from heat, then fold in the rice krispies, cookie crumbles, and 2 tablespoons of each type of sprinkles.
  • Using a greased silicone spatula, gently press the mixture into the prepared baking pan.
  • Top with the reserved cookie pieces for extra crunch.
  • In two separate bowls, melt the white chocolate chips in the microwave for 30 seconds each.
  • Drizzle the first bowl of plain white chocolate over the treats using a sandwich bag with the corner cut off.
  • Add the red food coloring to the second bowl to create a pink chocolate, then drizzle it in the opposite direction over the treats.
  • Finish by sprinkling the remaining sprinkles on top and let them cool until set.

Notes

For a richer flavor, use a combination of dark and white chocolate chips.
If desired, the heavy cream can be added to the melted chocolate for a smoother texture.
These treats can be stored in an airtight container for up to a week.
