- 1.5 pounds boneless skinless chicken breasts
- 1.5 tablespoons olive oil
- 1.5 teaspoons Italian seasoning
- 0.5 teaspoon onion powder
- 0.5 teaspoon pepper
- 0.5 teaspoon sea salt
- 1 cup uncooked orzo
- 2.25 cups chicken broth
- 3–4 cloves garlic
- 1 cup cherry tomatoes
- 6–8 oz cream cheese
- 2 handfuls baby spinach
- 0.25 cup freshly grated parmesan
- 1–2 tablespoons heavy cream (optional)
Instructions
- Preheat oven to 400°F and prepare a large oven-safe dish with olive oil.
- Toss cubed chicken with Italian seasoning, onion powder, pepper, and sea salt.
- Sear the chicken in the prepared dish for 5-7 minutes until browned.
- Add minced garlic and sauté for 1 minute, then add cherry tomatoes for another 2-3 minutes.
- Stir in orzo and chicken broth; optional heavy cream can be added.
- Return the sautéed chicken to the mixture, fold in baby spinach, and top with cream cheese and parmesan.
- Bake for 30 minutes until bubbly and orzo is tender.
Notes
For a gluten-free option, substitute orzo with gluten-free pasta.
