  • 1.5 pounds boneless skinless chicken breasts
  • 1.5 tablespoons olive oil
  • 1.5 teaspoons Italian seasoning
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon pepper
  • 0.5 teaspoon sea salt
  • 1 cup uncooked orzo
  • 2.25 cups chicken broth
  • 34 cloves garlic
  • 1 cup cherry tomatoes
  • 68 oz cream cheese
  • 2 handfuls baby spinach
  • 0.25 cup freshly grated parmesan
  • 12 tablespoons heavy cream (optional)

Instructions

  • Preheat oven to 400°F and prepare a large oven-safe dish with olive oil.
  • Toss cubed chicken with Italian seasoning, onion powder, pepper, and sea salt.
  • Sear the chicken in the prepared dish for 5-7 minutes until browned.
  • Add minced garlic and sauté for 1 minute, then add cherry tomatoes for another 2-3 minutes.
  • Stir in orzo and chicken broth; optional heavy cream can be added.
  • Return the sautéed chicken to the mixture, fold in baby spinach, and top with cream cheese and parmesan.
  • Bake for 30 minutes until bubbly and orzo is tender.

Notes

For a gluten-free option, substitute orzo with gluten-free pasta.
