- 1 cup shredded cheddar cheese
- ½ cup salsa
- ½ tsp chili powder or taco seasoning (optional)
- 6 medium flour tortillas
- Cooking spray or a little butter/oil for brushing
Instructions
- Preheat oven to 425°F and line a baking sheet with parchment paper.
- In a bowl, mash half of the black beans and mix in cheese, salsa, and optional seasoning.
- Spread black bean mixture on 3 tortillas and top with another tortilla.
- Brush the tops with oil or melted butter, then bake for 15–17 minutes until crispy.
- Slice into wedges and serve with salsa, sour cream, or guacamole.
Notes
For extra flavor, consider grilling the quesadillas in a skillet before baking.
Use fresh, shredded cheese for the best melt. Cold cheese won’t melt consistently.
