- 4 cabbage steaks
- 1/3 cup olive oil

- 1 1/2 cups grated parmigiano reggiano cheese
- 1 tbsp. balsamic vinegar
- 1 tbsp. chopped parsley
Instructions
- Preheat your oven to 425°F and line a baking sheet with parchment paper. Wash the cabbage and slice it in half vertically.
- Cut 'steaks' from one half, about 1 inch thick, ensuring they hold together at the stem.
- In a bowl, mix together olive oil, 1/3 cup of grated Parmesan, minced garlic, salt, pepper, and smoked paprika. Brush both sides of the cabbage steaks with this mixture.
- Using the remaining Parmesan, create small mounds on the baking sheet (about 1/3 cup for each steak) to serve as a base for the cabbage steaks.
- Place each cabbage steak on its cheese bed and roast in the oven for 20-25 minutes, or until the cheese becomes brown and crisp.
- Before serving, drizzle with balsamic vinegar and sprinkle with fresh parsley. Serve immediately.
