Description

Crockpot Cowboy Stew is a delightful blend of tender meat, savory sausage, and vibrant vegetables that combines rich flavors and easy preparation for a comforting meal anytime.


Ingredients

  • 1 lb stew meat
  • 1 lb kielbasa sausage (sliced)
  • 1 medium white or yellow onion (diced)
  • 2 large carrots (sliced)
  • 2 stalks celery (diced)
  • 1 large russet potato (peeled and diced)
  • 1 cup beef broth
  • 1 tablespoon Worcestershire
  • 1 (16 oz) can pinto beans (rinsed and drained)
  • 1 (15.25 oz) can corn (drained)
  • 1 (14.5 oz) can diced tomatoes (do not drain)
  • 2 tablespoons chili powder
  • 2 teaspoons garlic powder
  • 1 teaspoon dried oregano
  • 2 tablespoons corn starch
  • Salt and pepper (to taste)

Instructions

  • Combine stew meat, kielbasa, onion, carrots, celery, potatoes, broth, Worcestershire sauce, beans, corn, and tomatoes in a crockpot.
  • Cover and cook on low for 7 to 8 hours or high for 4 to 6 hours.
  • Make a slurry by mixing corn starch with cold water; stir into the stew 10 minutes before serving to thicken.
  • Cover and cook for an additional 5 to 10 minutes until thickened.
  • Season with salt and pepper, then serve in bowls.

Notes

For additional flavor, brown the stew meat before adding it to the crockpot.
Use low-sodium beef broth to control salt intake or opt for vegetable broth for a vegetarian version.
