- 1 lb stew meat
- 1 lb kielbasa sausage (sliced)
- 1 medium white or yellow onion (diced)
- 2 large carrots (sliced)
- 2 stalks celery (diced)
- 1 large russet potato (peeled and diced)
- 1 cup beef broth
- 1 tablespoon Worcestershire
- 1 (16 oz) can pinto beans (rinsed and drained)
- 1 (15.25 oz) can corn (drained)
- 1 (14.5 oz) can diced tomatoes (do not drain)
- 2 tablespoons chili powder
- 2 teaspoons garlic powder
- 1 teaspoon dried oregano
- 2 tablespoons corn starch
- Salt and pepper (to taste)
Instructions
- Combine stew meat, kielbasa, onion, carrots, celery, potatoes, broth, Worcestershire sauce, beans, corn, and tomatoes in a crockpot.
- Cover and cook on low for 7 to 8 hours or high for 4 to 6 hours.
- Make a slurry by mixing corn starch with cold water; stir into the stew 10 minutes before serving to thicken.
- Cover and cook for an additional 5 to 10 minutes until thickened.
- Season with salt and pepper, then serve in bowls.
Notes
For additional flavor, brown the stew meat before adding it to the crockpot.
Use low-sodium beef broth to control salt intake or opt for vegetable broth for a vegetarian version.
