Description

This Crockpot Sausage Tortellini Soup is a comforting blend of Italian sausage, creamy broth, and tender tortellini. Perfect for busy evenings, it’s as easy to prepare as it is delicious!


Ingredients

  • 1 pound ground Italian sausage
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 2 medium carrots (peeled and thinly sliced)
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 packet (19-ounce) frozen cheese tortellini
  • 1 ½ cups heavy cream
  • 2 cups fresh baby spinach leaves
  • 1 cup shredded Parmesan cheese
  • Parsley for garnish

Instructions

  • Brown the sausage in a skillet until cooked and fragrant, then transfer to a slow cooker.
  • Add diced onion, minced garlic, and sliced carrots to the slow cooker and stir.
  • Pour in chicken broth, add Italian seasoning, salt, and black pepper, and mix well.
  • Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours.
  • About 30 minutes before serving, add frozen cheese tortellini to the slow cooker and stir gently.
  • Stir in heavy cream, spinach, and shredded Parmesan cheese, cooking for an additional 5-10 minutes until spinach wilts and soup thickens.
  • Taste and adjust seasoning before serving, garnish with parsley.

Notes

For a lighter option, substitute ground turkey for sausage.
Adjust salt based on the saltiness of your chicken broth.
Add more chicken broth or cream if the soup is too thick.
