- 1 pound ground Italian sausage
- 1 medium onion (diced)
- 3 cloves garlic (minced)
- 2 medium carrots (peeled and thinly sliced)
- 4 cups chicken broth
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 packet (19-ounce) frozen cheese tortellini
- 1 ½ cups heavy cream
- 2 cups fresh baby spinach leaves
- 1 cup shredded Parmesan cheese
- Parsley for garnish
Instructions
- Brown the sausage in a skillet until cooked and fragrant, then transfer to a slow cooker.
- Add diced onion, minced garlic, and sliced carrots to the slow cooker and stir.
- Pour in chicken broth, add Italian seasoning, salt, and black pepper, and mix well.
- Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours.
- About 30 minutes before serving, add frozen cheese tortellini to the slow cooker and stir gently.
- Stir in heavy cream, spinach, and shredded Parmesan cheese, cooking for an additional 5-10 minutes until spinach wilts and soup thickens.
- Taste and adjust seasoning before serving, garnish with parsley.
Notes
For a lighter option, substitute ground turkey for sausage.
Adjust salt based on the saltiness of your chicken broth.
Add more chicken broth or cream if the soup is too thick.
