- 4 cups chicken broth
- 1–2 cups water
- 2 tablespoons Old Bay seasoning
- 2 tablespoons Creole/Cajun seasoning
- 2 lbs raw jumbo shrimp
- 1 lemon
- Chopped parsley
Instructions
- Layer halved red-skinned potatoes at the bottom of the crockpot.
- Add sliced andouille sausage, corn pieces, onion, and minced garlic on top.
- Pour chicken broth and additional water to cover ingredients; stir in seasonings.
- Cover and cook on Low for 5–6 hours or High for 3–4 hours until potatoes are tender.
- Stir in thawed raw shrimp and cook for an additional 30–60 minutes until shrimp is pink and opaque.
- Squeeze fresh lemon juice over mixture and top with chopped parsley before serving.
