Ingredients

  • 1.5 lb red-skinned potatoes
  • 2 ropes andouille sausage
  • 34 sweet corn on the cob
  • 1 onion
  • 5 garlic cloves
  • 4 cups chicken broth
  • 12 cups water
  • 2 tablespoons Old Bay seasoning
  • 2 tablespoons Creole/Cajun seasoning
  • 2 lbs raw jumbo shrimp
  • 1 lemon
  • Chopped parsley

Instructions

  • Layer halved red-skinned potatoes at the bottom of the crockpot.
  • Add sliced andouille sausage, corn pieces, onion, and minced garlic on top.
  • Pour chicken broth and additional water to cover ingredients; stir in seasonings.
  • Cover and cook on Low for 5–6 hours or High for 3–4 hours until potatoes are tender.
  • Stir in thawed raw shrimp and cook for an additional 30–60 minutes until shrimp is pink and opaque.
  • Squeeze fresh lemon juice over mixture and top with chopped parsley before serving.
