Description

This Crockpot Taco Casserole offers an irresistible blend of seasoned beef, zesty salsa, and melting cheese, making it a perfect quick dinner option. With just 15 minutes of prep, you can enjoy comfort food at its finest, ideal for potlucks or weeknight meals.

  • 1 tablespoon olive oil
  • 2 pounds lean ground beef
  • 1 small yellow onion (diced)
  • 1 package mild taco seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 15-oz can mild red enchilada sauce
  • 1 15-oz can black beans, drained and rinsed
  • 1 15-oz can corn kernels, drained
  • 1 cup chunky salsa
  • 6 ounces corn tortilla chips (divided)
  • 2 cups shredded Mexican cheese blend (divided)
  • Avocado slices
  • Sour cream
  • Diced tomatoes
  • Fresh chopped cilantro
  • Lime wedges

Instructions

  • Prepare the crockpot by spraying it with nonstick spray.
  • Brown the ground beef with olive oil over medium-high heat for 7–10 minutes, draining excess grease afterward.
  • Add diced onions, taco seasoning, salt, black pepper, garlic powder, enchilada sauce, black beans, corn, and salsa to the skillet, and let simmer for a few minutes.
  • Transfer the meat mixture to the crockpot, layer half of the tortilla chips on top, followed by one cup of cheese, then gently stir to combine.
  • Cover and cook on HIGH for 2 hours.
  • Sprinkle the remaining cheese on top, cover again, and cook on LOW for an additional 20–30 minutes until the cheese is melted.
  • Garnish with avocado, sour cream, diced tomatoes, cilantro, and lime wedges before serving.

Notes

You can substitute lean ground beef with ground turkey or chicken for a lighter version.
For a gluten-free option, ensure the taco seasoning and tortilla chips are gluten-free.
This dish can be customized with various toppings like diced jalapeños or olives to suit your taste.
