Description

Hearty Crockpot Turkey Chili is the perfect comfort food! Made with lean turkey, colorful veggies, and spices, this easy recipe is ideal for busy weeknights or chilly evenings.


Ingredients

  • 1 tablespoon Olive Oil
  • 2 lbs Lean Ground Turkey
  • 1 Onion, chopped
  • 34 cloves Garlic, minced
  • 1 Red Bell Pepper, chopped
  • 1 Green Bell Pepper, chopped
  • 28 oz Diced Tomatoes (canned)
  • 3 cups Chicken Broth
  • 3 tablespoons Tomato Paste
  • 2 tablespoons Chili Powder
  • 1 tablespoon Ground Cumin
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Dried Oregano
  • ½ teaspoon Garlic Powder
  • ¼ teaspoon Cayenne Pepper
  • Salt and Pepper, to taste
  • 1 Bay Leaf
  • 15 oz Black Beans, rinsed and drained
  • 15 oz Dark Red Kidney Beans, rinsed and drained
  • 15 oz Cannellini Beans, rinsed and drained

Instructions

  • Heat olive oil in a skillet, brown ground turkey with onion and garlic for 5-7 minutes.
  • Transfer to crockpot, add bell peppers, tomatoes, chicken broth, tomato paste, and spices. Stir well.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours.
  • About an hour before serving, add beans and mix.
  • Ladle into bowls and add desired toppings.

Notes

This chili can be made ahead of time and tastes even better the next day.
Freeze leftovers in a sealed container for up to 3 months.
Adjust the heat by changing the amount of cayenne pepper.
