Ingredients
Scale
- 10 dates (soaked in hot water for 10 minutes to soften)
- 1/2 cup almond flour
- 4 tbsp chocolate protein powder (i use optimum nutrition gold standard)
- 2 tbsp cocoa powder
- 2 1/2 tbsp maple syrup
- 1 tsp vanilla
- 1/8 teaspoon salt
- 1 cup cottage cheese (good culture brand provides the best thick texture)
- 1/2 cup vanilla protein powder
- 1 1/4 cups almond flour (i always use king arthur for a finer crumb)
- 2 1/2 tbsp maple syrup
- 2 tbsp cashew butter
- 1 1/2 tsp vanilla
- 1/3 cup mini chocolate chips (i prefer enjoy life for their clean ingredients)
Instructions
- Soak the dates in hot water for 10 minutes to soften, then drain well. In a food processor, blend the softened dates with chocolate protein powder, cocoa powder, maple syrup, vanilla, and salt until smooth to create the brownie base.
- In a large bowl, mix together cottage cheese, vanilla protein powder, almond flour, cashew butter, remaining maple syrup, and vanilla until smooth. Fold in mini chocolate chips gently at the end.
- Line an 8×8 inch baking dish with parchment paper. Press the date-chocolate mixture evenly across the bottom and cover with the cottage cheese mixture, smoothing to ensure an even top.
- Freeze for at least 1 hour until firm, then lift out using parchment paper and cut into squares. Serve straight from the freezer or let sit for 5 minutes before serving.
Notes
Using damp hands helps prevent sticking during mixing and pressing.
These brownies are best served cold straight from the freezer for the best texture.
Feel free to adjust the sweetness by adding more or less maple syrup based on your preference.
