  • 1/2 cup unsalted butter, softened to room temperature
  • 1 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour
  • 3 cups confectioners' sugar
  • 2 tablespoons meringue powder
  • 1/4 cup room temperature water
  • 1/2 teaspoon vanilla extract
  • gel food colouring

Instructions

  1. In a large mixing bowl, cream together the softened butter and granulated sugar using a hand or stand mixer on medium speed until light and fluffy, approximately 2 minutes.
  2. Add in the egg and vanilla extract, beating until fully combined. Change the mixer speed to low and incorporate baking powder and salt. Gradually mix in the all-purpose flour until well combined.
  3. Form the cookie dough into a ball, wrap it tightly in plastic wrap, and freeze for 30 minutes or refrigerate until firm (at least 1 hour, but up to overnight).
  4. Preheat your oven to 350°F (175°C) and line a half sheet baking pan with parchment paper or a silicone baking mat.
  5. Once the dough has firmed up, let it rest at room temperature for 5-10 minutes. On a lightly floured surface, roll the dough out to about 1/4-inch thick. Use an egg-shaped cookie cutter to cut out cookie shapes.
  6. Place the cookies onto the prepared baking sheet, spaced one inch apart. Re-roll any dough scraps and cut out additional cookies.
  7. Bake in the preheated oven for 8-10 minutes, or until the edges turn golden brown. Allow the cookies to cool on the baking sheet for a couple of minutes before transferring them to a wire rack to cool completely.

Notes

Make sure to let the dough chill properly to maintain the shape of the cookies when baking.
