Ingredients
Scale
- 13.25 oz white cake mix box
- ½ cup unsalted butter (113 g), melted, slightly cooled
- 2 large eggs
- 5 tablespoons rainbow confetti sprinkles, plus more for rolling
- 1 teaspoon pure vanilla extract, optional
- ¼ teaspoon almond extract, optional
Instructions
- Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, combine the dry cake mix, melted butter, eggs, and optional extracts, stirring until a thick dough forms.
- Gently fold in the rainbow sprinkles without over-mixing; the dough will be sticky.
- Let the dough rest uncovered for about 5 minutes to thicken.
- Using a medium cookie scoop, portion out the dough into balls.
- Roll each ball in additional sprinkles, pressing gently to adhere them to all sides.
- Place the dough balls on the prepared baking sheets, spacing them about 3 inches apart, and bake for 10-12 minutes until the edges are set but the center looks slightly underdone.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
For a richer flavor, consider adding both vanilla and almond extracts.
Ensure the cookie dough has thickened before portioning to achieve the best texture.
These cookies can be stored in an airtight container for up to a week.
