Description

Ingredients

  • 1 English cucumber
  • 1 teaspoon kosher salt
  • 12 ounces Campari tomatoes
  • 1/4 small red onion
  • 3 tablespoons champagne vinegar or red wine vinegar or cider vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1/3 cup chopped fresh dill
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Slice the cucumber in half lengthwise and spoon out the seeds, then discard them.
  2. Slice the cucumber into thick half-moons and add to a large bowl.
  3. Sprinkle the cucumbers with 1/2 teaspoon kosher salt and let them sit for about 5 minutes to release moisture.
  4. After 5 minutes, discard any cucumber water.
  5. Slice the tomatoes into thick wedges and add them to the bowl along with the sliced red onion.
  6. Drizzle the mixture with the vinegar, olive oil, honey, the remaining kosher salt, and freshly ground black pepper.
  7. Toss gently to coat all ingredients well.
  8. Sprinkle with the chopped dill and toss again until evenly distributed.
  9. Serve chilled or at room temperature.

Notes

For extra flavor, let the salad sit for about 30 minutes before serving to allow the flavors to meld.
This salad can be easily customized with additional herbs or vegetables as desired.
