Ingredients

  • 1 lb ground beef
  • 1 cup onion (chopped)

  • 14 oz diced tomatoes with green chiles (1 can)
  • 1 quart beef broth
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 15 oz black beans (1 can, drained and rinsed)
  • 15 oz pinto beans (1 can, drained and rinsed)
  • 1 cup frozen corn (thawed)

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Add ground beef, onions, and garlic. Cook until beef is browned.
  • Add diced tomatoes, beef broth, and spices. Stir well.
  • Incorporate black beans, pinto beans, and corn. Mix thoroughly.
  • Bring soup to a boil, then reduce heat and let simmer for 30 minutes to 1 hour.
  • Taste and adjust seasonings before serving.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days.
For longer storage, freeze in a safe container for up to 3 months.
Add a splash of broth when reheating if the soup has thickened.
