Ingredients

  • 2 tablespoons butter
  • 1 yellow onion, chopped
  • 1/3 cup crumbled blue cheese
  • 1/4 cup panko breadcrumbs
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon coarse ground black pepper
  • 2 tablespoons unsalted butter
  • 4 beef tenderloin, filet mignon steaks (~8 ounces each)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper

Instructions

  • Preheat the oven to 450 degrees.
  • Heat 2 tablespoons of butter in a large skillet over medium heat.
  • Add the chopped onions and cook, stirring occasionally, for about 3-4 minutes until they are translucent.
  • Transfer the cooked onions to a large mixing bowl and let them cool for 2-3 minutes.
  • In the bowl, add crumbled blue cheese, panko breadcrumbs, kosher salt, and coarse ground black pepper.
  • Gently mash all ingredients together with a fork until combined.
  • In the same skillet, add the remaining 2 tablespoons of unsalted butter and heat it on high.
  • Season the filet mignon steaks on all sides with kosher salt and black pepper.
  • Sear the steaks in the skillet, cooking each side for 3 minutes until browned.
  • Top each steak with the blue cheese mixture and then transfer the skillet to the oven.
  • Bake for 4 minutes for rare, 5-6 minutes for medium, or longer for well done.
  • Let the steaks rest for 10 minutes, covered with a sheet of foil, before serving.

Notes

For a more intense flavor, use aged blue cheese.
Serve with a side of roasted vegetables for a complete meal.
