Description

These French Onion Chicken Lasagna Rollups feature a delicious blend of creamy sauces and melted cheese. Perfect for a comforting dinner, they combine rich flavors of sweet onions and tender chicken, making them a delightful homemade choice for any meal.

  • 1 tablespoon unsalted butter
  • 1 tablespoon extra virgin olive oil
  • 2 large sweet onions, thinly sliced
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¼ cup (½ stick / 57 g) unsalted butter
  • 3 teaspoons garlic, minced
  • 1 teaspoon kosher salt
  • ½ teaspoon pepper
  • ¼ teaspoon crushed red pepper
  • 2 cups (476 g) heavy cream
  • 1 cup (100 g) parmesan cheese, grated
  • 9 lasagna noodles, cooked al dente according to package instructions
  • 1 ½ cups (369 g) ricotta cheese
  • 2 cups (280 g) rotisserie chicken, chopped
  • 2 cups (226 g) gruyere cheese, shredded, divided
  • ½ cup (50 g) parmesan cheese, grated
  • 1 ½ cups (45 g) spinach, chopped, divided
  • parsley, chopped for garnish

Instructions

  • Preheat your oven and prepare a 9×13-inch baking dish with nonstick spray.
  • In a skillet, melt butter and olive oil over medium heat, and sauté the thinly sliced onions until they become caramelized.
  • Season the onions with salt and pepper, then stir in minced garlic, additional salt, pepper, and crushed red pepper.
  • Pour in the heavy cream and mix in the grated parmesan cheese until well combined. Set this mixture aside.
  • Cook the lasagna noodles according to the package instructions until al dente, and drain them.
  • In a separate bowl, combine the ricotta cheese, chopped rotisserie chicken, half of the shredded gruyere cheese, and half of the chopped spinach.
  • Spread some of the creamy onion mixture into the bottom of the baking dish.
  • Lay out the lasagna noodles and fill them with the chicken and cheese mixture, rolling them up gently and placing them seam side down in the dish.
  • Top the roll-ups with the remaining creamy onion mixture, sprinkle with the remaining gruyere cheese, parmesan cheese, and spinach.
  • Cover the dish with aluminum foil and bake for a specified time. Remove the foil to allow cheese to brown before serving.

Notes

For added flavor, consider using flavored olive oil when sautéing onions.
Feel free to substitute rotisserie chicken with cooked shredded chicken breast or thighs for a healthier option.
