Instructions
- Preheat the oven and prepare two 12-cup muffin pans by buttering or greasing them, or using liners.
- Cut the brioche bread into ½” cubes and place them in a large mixing bowl.
- In another bowl, whisk together the eggs, light brown sugar, granulated sugar, cinnamon, and a pinch of sea salt until smooth.
- Add the cream, milk, and vanilla extract to the egg mixture and whisk until combined.
- Pour the egg mixture over the cubed bread in the large bowl, stirring gently until the bread absorbs the liquid.
- Allow the mixture to sit for 5 minutes to soak up the liquid fully.
- Scoop ¼ cup portions of the soaked bread mixture into each muffin cup.
- Cover the muffin pans tightly with plastic wrap and refrigerate for several hours or overnight.
Notes
For added flavor, consider sprinkling a bit of extra cinnamon or nutmeg on top before baking.
