Description

  • 1 loaf brioche bread (14 ounces)
  • 6 large eggs
  • ¼ cup light brown sugar
  • ¼ cup granulated sugar
  • ½ teaspoon ground cinnamon
  • Pinch fine sea salt
  • 1 cups whole milk
  • 1 cup heavy cream
  • 2 teaspoons pure vanilla extract
  • ½ cup salted butter (softened)
  • ½ cup light brown sugar
  • ½ cup all-purpose flour
  • 1 teaspoon cinnamon
  • ¼ teaspoon fine sea salt

Instructions

  1. Preheat the oven and prepare two 12-cup muffin pans by buttering or greasing them, or using liners.
  2. Cut the brioche bread into ½” cubes and place them in a large mixing bowl.
  3. In another bowl, whisk together the eggs, light brown sugar, granulated sugar, cinnamon, and a pinch of sea salt until smooth.
  4. Add the cream, milk, and vanilla extract to the egg mixture and whisk until combined.
  5. Pour the egg mixture over the cubed bread in the large bowl, stirring gently until the bread absorbs the liquid.
  6. Allow the mixture to sit for 5 minutes to soak up the liquid fully.
  7. Scoop ¼ cup portions of the soaked bread mixture into each muffin cup.
  8. Cover the muffin pans tightly with plastic wrap and refrigerate for several hours or overnight.

Notes

For added flavor, consider sprinkling a bit of extra cinnamon or nutmeg on top before baking.
Feel free to customize with chocolate chips or dried fruit for a unique twist.
