Description

This Fresh Carrot Ribbon Salad is a delightful combination of fresh carrots, vibrant herbs, and crunchy pistachios. With a simple dressing of olive oil and lemon juice, it’s perfect for light lunches or as a side dish for dinner. Enjoy a burst of flavor with every bite!


Ingredients

  • 6 large carrots, (about 1 pound)
  • 1/2 cup finely chopped pistachios
  • 2 tablespoons chopped dill
  • 2 tablespoons chopped parsley
  • 1 green onion, (thinly sliced)
  • Extra herbs and chopped pistachios, (for garnish)
  • 1/3 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon apple cider vinegar, (or champagne vinegar)
  • 2 teaspoons honey
  • 1 teaspoon Dijon mustard
  • 1 small clove garlic, (grated)
  • Kosher salt and black pepper, (to taste)

Instructions

  1. Wash and peel the carrots, then use a vegetable peeler to shave them into long, thin ribbons. Place the ribbons in a large bowl.
  2. In a small bowl or jar, whisk together olive oil, fresh lemon juice, apple cider vinegar, honey, Dijon mustard, and grated garlic. Season with kosher salt and black pepper to taste and whisk until smooth.
  3. Pour the dressing over the carrot ribbons and toss them gently to coat.
  4. Add chopped pistachios, dill, parsley, and green onion to the salad, tossing again until well distributed.
  5. Transfer the salad to a serving platter and garnish with extra herbs and some chopped pistachios. Serve immediately or chill for 15-30 minutes before serving.

Notes

For extra flavor, add more herbs according to your taste preferences.
This salad can be made ahead of time—just wait to add the dressing until shortly before serving to keep the carrots crisp.
