- 1 tablespoon cornstarch
- 1 ½ teaspoons baking powder
- 1 teaspoon fine sea salt
- ½ teaspoon baking soda
- 1 cup unsalted butter, room temperature
- 1 ¼ cups granulated sugar
- ¼ cup light brown sugar, firmly packed
- 1 large egg, room temperature
- 1 large egg yolk, room temperature
- 1 ½ teaspoons vanilla extract
- ½ teaspoon almond extract
- ½ cup jimmies sprinkles
- ½ cup granulated sugar for rolling cookie dough balls
Instructions
- In a medium bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and baking soda. Set aside.
- In a large mixing bowl, beat the unsalted butter, granulated sugar, and light brown sugar together on medium speed for 3 to 4 minutes until fluffy.
- Gradually reduce the speed, adding the egg and egg yolk, mixing until combined. Then add the vanilla and almond extracts, mixing until fully incorporated.
- On low speed, add the dry ingredients in half-cup increments, scraping the bowl as needed until no flour streaks remain. Finally, mix in the jimmies sprinkles.
- Line a baking sheet with parchment paper or a silicone mat.
- Scoop the cookie dough using a #40 scoop (two tablespoons), placing them on the prepared sheet. Chill the cookies in the refrigerator for 2 hours or overnight.
Notes
For lighter cookies, consider using clear vanilla extract.
Allow the cookies to chill properly to ensure they hold their shape while baking.
