Ingredients

  • 2 cups all purpose flour (plus more if needed)
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup butter (softened slightly)
  • 3/4 cups sugar
  • 1 large egg
  • 3/4 teaspoons pure vanilla extract
  • 1/2 teaspoon almond extract
  • 16 ounces white chocolate
  • 1/3 cup light corn syrup (plus more if needed)
  • food coloring (flesh tone and other color for your grad caps)

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. In a bowl, mix the flour, salt, and baking powder together, then set aside.
  3. Cream the softened butter and sugar until light and fluffy.
  4. Stir in the egg, vanilla extract, and almond extract.
  5. Gradually add the dry ingredients and mix until just combined; add flour if the dough is sticky.
  6. Roll out the cookie dough on a floured surface to about 1/8 inch thickness.
  7. Cut twelve 3-inch circles from the dough and twelve diamond-shaped grad caps.
  8. Using the diamond cutter, cut a triangle-shaped notch out of each circle of dough.
  9. Brush two long edges of the diamond dough and insert it into the notch on the circle; press the seams together.
  10. Bake for 10-14 minutes until edges are set and tops no longer look wet. Allow the cookies to cool completely before decorating.
  11. Reserve about 2 tablespoons of white modeling chocolate for tassels and color remaining chocolate with flesh tone food coloring and a color for the grad caps.
  12. Let the colored modeling chocolate rest at room temperature for about 30 minutes.
  13. Roll out the flesh tone modeling chocolate to about 1/16 inch thickness and cut twelve 3-inch circles.
  14. Roll out the blue modeling chocolate to the same thickness and cut twelve diamond-shaped caps.
  15. Repeat the process of brushing corn syrup over cookies and layering the colored modeling chocolate on top, pressing seams together.
  16. Color modeling chocolate for tassels; roll into a tube, extrude strands, cut into 1-inch pieces, and attach them to the caps using corn syrup.

Notes

Ensure to let cookies cool completely before decorating to avoid melting the chocolate.
