- ½ cup butter – unsalted
- 3 eggs
- 3 drops green food coloring – or more
- 2 ½ cups all-purpose flour
- ½ teaspoon salt
- ½ teaspoon baking soda

- 1 cup buttermilk*
- 2 teaspoon vanilla extract
- 8 ounces cream cheese – softened
- ½ cup unsalted butter – softened
- 4 cups confectioner's sugar
- 1 teaspoon vanilla extract
- green sanding sugar or shamrock sprinkles
Instructions
- Preheat your oven to 350°F and line muffin pans with 18 liners.
- In a large bowl, cream together the sugar and unsalted butter until smooth.
- Add the eggs one at a time, beating well after each addition.
- Mix in the green food coloring and vanilla extract until combined.
- In a separate bowl, combine the flour, salt, baking soda, and baking powder.
- Stir the buttermilk into the wet ingredients, combining thoroughly.
- Gradually add the dry flour mixture to the wet ingredients and mix until well incorporated.
- Fill each lined cupcake liner about ¾ full with the batter.
- Bake in the preheated oven for approximately 17 minutes, or until a toothpick inserted into the center comes out clean.
Notes
Ensure all ingredients are at room temperature for better mixing results.
Use more food coloring if a deeper green color is desired.
These cupcakes can be topped with cream cheese frosting and festive sprinkles.
