Description

These delightful green velvet cupcakes are incredibly flavorful and easy to make. With a combination of buttermilk and vibrant green food coloring, they are perfect for any festive occasion!


Ingredients

  • 1 ¼ cup granulated sugar
  • ½ cup butter – unsalted
  • 3 eggs
  • 3 drops green food coloring – or more
  • 2 ½ cups all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 1 ¼ teaspoon baking powder
  • 1 cup buttermilk*
  • 2 teaspoon vanilla extract
  • 8 ounces cream cheese – softened
  • ½ cup unsalted butter – softened
  • 4 cups confectioner's sugar
  • 1 teaspoon vanilla extract
  • green sanding sugar or shamrock sprinkles

Instructions

  • Preheat your oven to 350°F and line muffin pans with 18 liners.
  • In a large bowl, cream together the sugar and unsalted butter until smooth.
  • Add the eggs one at a time, beating well after each addition.
  • Mix in the green food coloring and vanilla extract until combined.
  • In a separate bowl, combine the flour, salt, baking soda, and baking powder.
  • Stir the buttermilk into the wet ingredients, combining thoroughly.
  • Gradually add the dry flour mixture to the wet ingredients and mix until well incorporated.
  • Fill each lined cupcake liner about ¾ full with the batter.
  • Bake in the preheated oven for approximately 17 minutes, or until a toothpick inserted into the center comes out clean.

Notes

Ensure all ingredients are at room temperature for better mixing results.
Use more food coloring if a deeper green color is desired.
These cupcakes can be topped with cream cheese frosting and festive sprinkles.
