- 2 pounds carrots (about 12–16 medium carrots, about 1-inch in diameter)
- 1 1/2 tablespoons coconut oil, melted
- 1 teaspoon cinnamon
- 1 teaspoon chipotle paste
- 1/2 teaspoon chili powder
- salt, to taste
- for topping – fresh cilantro
Instructions
- Light the grill over medium-high heat and let it preheat.
- Wash and peel the carrots thoroughly.
- In a small bowl, mix coconut oil, cinnamon, chipotle paste, chili powder, and salt. Rub this mixture evenly over the carrots using your hands for even coating.
- Place the carrots on the hot grill over indirect heat. Grill for 20-25 minutes, turning and rotating them every 7-8 minutes until they are slightly soft yet firm when checked by pinching.
- Transfer the grilled carrots to a serving platter and top with fresh cilantro if desired before serving.
