Description

This Healthy Grilled Chicken Cobb Salad with Honey Dijon Dressing features grilled chicken, crisp greens, and a zesty homemade dressing. Perfect for a quick, healthy meal or delightful party dish!

Ingredients

Scale
  • 3 Tbsp raw honey (melted if solid)
  • 1/4 cup dijon mustard
  • 2 Tbsp fresh lemon juice or white vinegar
  • 1/4 cup avocado oil
  • 1/4 tsp sea salt
  • 34 boneless skinless chicken breasts (about 1 1/2 lbs)
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 Tbsp avocado oil (for the grill or pan)
  • 8 cups chopped romaine (kale, or other greens, or a mix)
  • 3/4 cup cherry tomatoes (halved)
  • 1/2 red onion (thinly sliced)
  • 1 med cucumber (peeled and sliced)
  • 1 large avocado (thinly sliced)
  • 8 slices bacon (cooked until crisp, and chopped or crumbled)
  • 6 hard boiled eggs (sliced)

Instructions

  1. Prepare the dressing by whisking honey, dijon mustard, lemon juice (or vinegar), and avocado oil together in a bowl or using an immersion blender for a smoother consistency. Set aside or refrigerate.
  2. Season chicken breasts by combining sea salt, black pepper, garlic powder, and onion powder in a small bowl. Grill the chicken on medium-high heat for about 5 minutes per side, or until cooked through (internal temperature should reach 165°F). Let rest, then slice.
  3. In a large serving bowl, layer the salad greens, cherry tomatoes, red onion, cucumber, avocado, crumbled bacon, and sliced hard-boiled eggs. Top with sliced grilled chicken.
  4. Drizzle the dressing over the salad or serve it on the side. Enjoy!

Notes

For a different flavor, experiment with different types of greens.
Ensure the grilled chicken reaches the recommended internal temperature for safety.
The dressing can be made in advance and stored in the refrigerator.
