Description

This homemade turkey noodle soup is a comforting blend of tender turkey, fresh vegetables, and egg noodles in a rich broth. With simple prep and flavorsome ingredients, it’s perfect for cozy dinners and reliving holiday memories with each nourishing spoonful.


Ingredients

  • 2 tablespoons olive oil
  • 1 cup carrots
  • 1 cup celery
  • 1 cup sweet Vidalia or yellow onion
  • 4 garlic cloves
  • 1012 cups chicken broth
  • 2 bay leaves
  • 1/2 teaspoon dried thyme leaves
  • 1/2 teaspoon dried oregano
  • 1 teaspoon pepper
  • 10 ounces wide egg noodles
  • 2 cups shredded cooked turkey
  • 4 tablespoons fresh flat-leaf parsley leaves
  • 1 tablespoon lemon juice
  • Salt to taste

Instructions

  • Heat olive oil in a large pot over medium-high heat.
  • Sauté carrots, celery, and onion for about 7 minutes until softened.
  • Add minced garlic and sauté for another 1-2 minutes.
  • Pour in chicken broth, bay leaves, thyme, oregano, and pepper. Bring to a boil for 5 minutes.
  • Add egg noodles and boil for 10 minutes until cooked.
  • Stir in turkey, parsley, and lemon juice, heating for another 1-2 minutes.
  • Season with salt and pepper, remove bay leaves, and serve.

Notes

Fresh herbs enhance flavor; dried herbs can substitute if needed.
Keep noodles separate when storing leftovers to prevent mushiness.
Reheat with additional broth or water if needed.
