- 2 tablespoons olive oil
- 1 cup carrots
- 1 cup celery
- 1 cup sweet Vidalia or yellow onion
- 4 garlic cloves
- 10–12 cups chicken broth
- 2 bay leaves
- 1/2 teaspoon dried thyme leaves
- 1/2 teaspoon dried oregano
- 1 teaspoon pepper
- 10 ounces wide egg noodles
- 2 cups shredded cooked turkey
- 4 tablespoons fresh flat-leaf parsley leaves
- 1 tablespoon lemon juice
- Salt to taste
Instructions
- Heat olive oil in a large pot over medium-high heat.
- Sauté carrots, celery, and onion for about 7 minutes until softened.
- Add minced garlic and sauté for another 1-2 minutes.
- Pour in chicken broth, bay leaves, thyme, oregano, and pepper. Bring to a boil for 5 minutes.
- Add egg noodles and boil for 10 minutes until cooked.
- Stir in turkey, parsley, and lemon juice, heating for another 1-2 minutes.
- Season with salt and pepper, remove bay leaves, and serve.
Notes
Fresh herbs enhance flavor; dried herbs can substitute if needed.
Keep noodles separate when storing leftovers to prevent mushiness.
Reheat with additional broth or water if needed.
