- 1 and 1/2 cups chopped pecans or walnuts
- 3 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon allspice
- 1/2 teaspoon salt
- 3 large eggs
- 1 cup vegetable oil
- 1 cup granulated sugar
- 1 cup brown sugar
- 1 teaspoon vanilla extract
- 1 and 1/2 cups mashed banana
- 1 cup crushed pineapple, drained
Instructions
- Preheat the oven to 300°F (149°C). Line a baking sheet with parchment paper or a silicone baking mat and spread the chopped nuts, baking for 6–8 minutes until fragrant. Cool for 10–15 minutes.
- Increase the oven temperature to 350°F (177°C). Grease three 8-inch round pans, line with parchment paper, and grease the parchment.
- Whisk together flour, baking powder, baking soda, cinnamon, allspice, and salt in a large bowl. In another bowl, whisk eggs and oil, then mix in granulated sugar, brown sugar, and vanilla, followed by mashed banana and crushed pineapple.
- Combine the banana/pineapple mixture with the dry ingredients and fold in 1 and 1/2 cups of toasted nuts.
- Divide the batter evenly among the prepared pans and bake for 26–29 minutes, or until a toothpick inserted comes out clean.
- Cool the cakes in the pans on a rack for 1 hour, then run a knife around the edges to remove from pans and cool completely.
- Beat together cream cheese and butter until smooth. Gradually add confectioners’ sugar, vanilla, and salt, then beat until creamy. Chill frosting if too runny.
- Trim the tops of each cake for a flat surface, assemble layers with frosting in between, and cover the outside of the cake with the remaining frosting. Top with remaining toasted nuts and refrigerate for at least 20 minutes before slicing.
Notes
Use ripe bananas for better flavor and moisture.
Make sure the cakes are completely cool before frosting to prevent melting.
The frosting can be chilled if you want a thicker consistency.
