- 16 ounces lasagna noodles (cooked according to package instructions)
- 1 teaspoon kosher salt
- 1 pound ground beef
- 1 small yellow onion (diced)
- 3 garlic cloves (minced)
- 32 ounces marinara sauce
- 1 tablespoon dried oregano
- 1 tablespoon dried basil
- 1 1/2 teaspoons kosher salt (or 3/4 teaspoon table salt)
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 15 ounces ricotta cheese
- 1 large egg (beaten)
- 3 cups mozzarella cheese (shredded, divided)
- 1/4 cup Parmesan cheese (shredded)
- 2 tablespoons fresh parsley (chopped)
Instructions
- Preheat the oven to 375°F and spray a 9×13 inch baking dish with cooking spray.
- Bring a large pot of water to a boil. Add 1 teaspoon of kosher salt, then add the lasagna noodles. Cook according to package instructions, drain, and set aside.
- In a large skillet over medium heat, cook the ground beef until browned. Add the onion and garlic, cooking until the onion is soft (about 3 minutes). Drain any excess grease.
- Stir in the marinara sauce, oregano, basil, salt, pepper, and red pepper flakes. Simmer the sauce for 10 minutes.
- In a bowl, mix the ricotta cheese, egg, 1 1/2 cups mozzarella cheese, Parmesan cheese, and parsley until well combined.
- Spread 1/2 cup of sauce in the bottom of the baking dish.
- On a large rimmed baking sheet, lay out the cooked noodles. Spread about 1/4 cup of the cheese mixture on each noodle, top with a tablespoon of meat sauce, then roll up. Arrange in the prepared baking dish, creating about 16 roll ups.
- Pour the remaining sauce over the roll ups and sprinkle with 1 1/2 cups mozzarella cheese on top.
- Cover with foil and bake for 30 to 35 minutes. Remove the foil and broil for a few minutes until the cheese is golden brown.
Notes
For best results, cook extra lasagna noodles to account for any that may break.
Feel free to customize the fillings with vegetables or other types of cheese.
Make ahead: Assemble the roll ups, cover, and refrigerate before baking. Just add a few extra minutes to the baking time.
