This Lemon Chicken Rice Skillet is a comforting dish bursting with flavor. With tender chicken, fresh spinach, and bright lemon, it’s perfect for busy weeknights!

- 1 Tbsp olive oil
- 1 cup diced yellow onion
- 2 lbs chicken breasts
- 1½ tsp Italian seasoning
- 1 tsp garlic powder
- 1 tsp paprika
- ½ tsp ground black pepper
- ½ lb cauliflower florets
- 1 cup uncooked long-grain white rice
- 2 cups chicken broth
- 2 Lemons (juice and zest)
- 3 cups fresh baby spinach
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add diced onion and cook until softened.
- Add bite-sized chicken pieces, Italian seasoning, garlic powder, paprika, and black pepper. Cook until golden brown.
- Stir in cauliflower florets and uncooked rice. Add lemon zest and juice, and a splash of broth to deglaze.
- Pour in remaining chicken broth, bring to a gentle boil, then simmer covered for 10 minutes.
- Stir in fresh spinach, cover, and let it sit for another 10 minutes.
- Fluff rice with a fork, adjust seasoning if needed, and serve warm.
Notes
Store leftovers at room temperature for no more than 2 hours, then refrigerate for up to 3 days.
Brown rice can be used, but it requires longer cooking time and additional broth.
