Description

This Leprechaun Pistachio Fudge combines irresistible flavors of white chocolate and Irish cream with crunchy pistachios. It’s easy to whip up and perfect for satisfying sweet cravings or serving at gatherings!


Ingredients

  • 3 ½ cups white chocolate chips (2224 ounces)
  • 14 ounces sweetened condensed milk
  • ¼ cup irish cream
  • 1 cup shelled pistachios roughly chopped

Instructions

  • Line an 8-inch × 8-inch baking dish with parchment paper or tin foil, allowing it to hang over the sides for easy removal later.
  • In a microwave-safe bowl, heat the sweetened condensed milk for 1 minute.
  • In a large glass bowl, combine the heated condensed milk with white chocolate chips. Let sit for 1 to 2 minutes before stirring until fully melted. If necessary, microwave for an additional 15 seconds and stir again.
  • Mix in the Irish cream until incorporated, then add 3/4 of the chopped pistachios and stir to combine.
  • Pour the mixture into the prepared baking dish and sprinkle the remaining pistachios on top, gently pressing them into the fudge.
  • Refrigerate the fudge for 3 to 4 hours until firm. Once set, lift it from the dish, remove the lining, and cut into 25 pieces. Store in an airtight container in the fridge.

Notes

Ensure the white chocolate is fully melted and incorporated with the condensed milk for a smooth texture.
Feel free to adjust the amount of pistachios based on your preference for crunch.
For best results, store the fudge in the refrigerator to keep it firm.
