Description

These Linzer Cookies are irresistibly delicious with a nutty flavor and sweet jam filling. Perfect for holiday gatherings or a cozy afternoon treat.


Ingredients

  • Almonds or Pistachios
  • Brown Sugar
  • All-Purpose Flour
  • Baking Powder
  • Ground Cinnamon
  • Salt
  • Unsalted Butter
  • Granulated Sugar
  • Egg
  • Pure Vanilla Extract
  • Jam or Preserves
  • Confectioners’ Sugar

Instructions

  • Prepare nuts by grinding them with brown sugar until fine.
  • Combine dry ingredients: flour, baking powder, cinnamon, and salt.
  • Mix wet ingredients: beat butter and sugar, then add egg and vanilla.
  • Combine dry and wet mixtures to form the dough.
  • Chill the dough in the refrigerator for at least 3 hours.
  • Preheat oven to 350°F and prepare baking sheets.
  • Roll out the dough and cut into circles.
  • Create holes in half the circles for the 'donut cookies'.
  • Bake cookies until lightly golden, about 10-11 minutes.
  • Dust donut cookies with confectioners’ sugar and assemble with jam.

Notes

Ensure nuts are finely ground, not turned to butter.
Room temperature butter and eggs help in mixing.
Dough can be made ahead and refrigerated or frozen.
