- 2½–3kg / 5½-6½ lb smoked ham (gammon in UK)
- 1 onion
- 1 carrot
- 1 tsp black peppercorns
- 2–3 bay leaves
- 125ml / 1/2 cup bourbon (or whisky)
- 125ml / 1/2 cup maple syrup
- 4 tbsp brown sugar
- 2 tbsp Dijon mustard
- 2 tsp apple cider vinegar
Instructions
- Prepare the ham by poaching with onion, carrot, peppercorns, and bay leaves until cooked.
- Make the glaze by simmering bourbon, maple syrup, brown sugar, Dijon mustard, and apple cider vinegar until thickened.
- Score the ham in a diamond pattern and brush with glaze.
- Roast ham at 200°C/400°F, glazing halfway until caramelized.
- Let the ham rest for 10 minutes before slicing.
