- 1 teaspoon dried oregano
- 0.5 teaspoon dried basil
- 0.5 teaspoon smoked paprika
- 0.5 teaspoon salt

Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with olive oil.
- In a large bowl, combine chicken pieces, sliced zucchini, halved cherry tomatoes, red onion slices, and minced garlic.
- Drizzle 2 tablespoons olive oil over the mixture, add oregano, basil, smoked paprika, salt, black pepper, and optional red pepper flakes. Toss until everything is well coated.
- Spread the seasoned mixture evenly in the prepared baking dish.
- Sprinkle mozzarella and parmesan cheese evenly over the top.
- Cover the baking dish tightly with aluminum foil and bake for 20 minutes.
- Remove the foil and continue baking for another 10 to 15 minutes until the cheese is golden and bubbly, and the chicken is cooked through at 165°F (75°C).
- Remove from oven and let it rest for 5 minutes before serving. Garnish with fresh parsley.
