Description

These No-Bake Chocolate Cherry Bourbon Balls combine chocolate, cherries, and bourbon for an irresistible treat. Quick to make, they bring joy to any celebration and are perfect for sharing with loved ones.


Ingredients

Scale
  • 1 cup pitted sour cherries
  • ½ cup bourbon
  • 1 tablespoon brown sugar
  • 8 oz semi-sweet chocolate, finely chopped
  • ⅓ cup heavy cream
  • 1 tablespoon unsalted butter, room temperature
  • ½ cup bourbon-soaked cherries, finely chopped and well-drained
  • 12 oz dark chocolate or chocolate melting wafers
  • Crushed freeze-dried cherries & flaky sea salt (optional)

Instructions

  • Soak the pitted sour cherries in bourbon and brown sugar for at least 2 hours.
  • Make the ganache by melting semi-sweet chocolate with heated heavy cream. Stir in butter until smooth.
  • Fold in the finely chopped bourbon-soaked cherries and refrigerate until firm.
  • Scoop the ganache into mounds and chill until firmer.
  • Roll each portion into balls and chill again for a firmer texture.
  • Dip the truffles in melted dark chocolate and let excess drip off.
  • Garnish with crushed freeze-dried cherries or sea salt before the chocolate sets.

Notes

Ensure cherries are well-drained to prevent sogginess in truffles.
Refrigerate ganache if it becomes too soft during scooping.
