Ingredients

  • 1 lb boneless skinless chicken breasts
  • 1 tbsp salted butter
  • ½ cup chopped onion
  • ½ cup green bell pepper
  • 4 oz canned mushrooms
  • 1 pkg onion soup mix
  • 1 ¼ cups water
  • 1 tbsp Worcestershire sauce
  • 1 tbsp cornstarch + 1 tbsp cold water
  • Cooked rice

Instructions

  • Pat chicken breasts dry, season with salt and pepper.
  • Heat butter in skillet and sauté onions and green bell peppers until translucent.
  • Add chicken to skillet, cooking on both sides until golden brown.
  • Sprinkle onion soup mix over veggies, add water and Worcestershire sauce, and simmer.
  • Whisk cornstarch and cold water, add to gravy until thickened.
  • Add chicken back to skillet, simmer to heat through.
  • Serve over rice, ladling gravy on top.

Notes

Leftovers can be stored in the fridge for up to 3 days or frozen for 3 months.
Searing the chicken well adds flavor and moisture.
For thicker gravy, let it simmer longer after adding the cornstarch.
