- 1 lb boneless skinless chicken breasts
- 1 tbsp salted butter
- ½ cup chopped onion
- ½ cup green bell pepper
- 4 oz canned mushrooms
- 1 pkg onion soup mix
- 1 ¼ cups water
- 1 tbsp Worcestershire sauce
- 1 tbsp cornstarch + 1 tbsp cold water
- Cooked rice
Instructions
- Pat chicken breasts dry, season with salt and pepper.
- Heat butter in skillet and sauté onions and green bell peppers until translucent.
- Add chicken to skillet, cooking on both sides until golden brown.
- Sprinkle onion soup mix over veggies, add water and Worcestershire sauce, and simmer.
- Whisk cornstarch and cold water, add to gravy until thickened.
- Add chicken back to skillet, simmer to heat through.
- Serve over rice, ladling gravy on top.
Notes
Leftovers can be stored in the fridge for up to 3 days or frozen for 3 months.
Searing the chicken well adds flavor and moisture.
For thicker gravy, let it simmer longer after adding the cornstarch.
