Description

Ingredients

  • 1/3 cup coconut oil
  • 1 1/4 cup dairy free chocolate chips*
  • 3 eggs
  • 1 cup coconut sugar
  • 1 cup almond flour, sifted
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°.
  2. Melt the coconut oil and chocolate chips together over low heat, stirring frequently until smooth. Set aside.
  3. In a large bowl, combine eggs and sugar, whisking continuously for at least 45 seconds to create a crackly top.
  4. Gently fold in the sifted almond flour and salt by hand to avoid over-mixing the batter.
  5. Pour in the melted chocolate mixture and stir by hand until combined.
  6. Line an 8×8 baking dish with parchment paper or spray with nonstick spray, then pour the batter into the pan.
  7. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean. Allow cooling before cutting and serving.

Notes

For a richer flavor, consider adding nuts or a pinch of vanilla extract to the batter.
