- 1 pound thick-cut bacon, diced
- 1 large yellow onion, finely diced (about 1 ½ cups)
- 3 cups fresh pineapple, finely diced (about ½ of a medium pineapple)
- 2 teaspoons garlic, minced
- ½ cup light brown sugar, packed
- ¼ cup apple cider vinegar
- ¼ cup maple syrup
- 1 teaspoon chili powder
- ¼ teaspoon kosher salt
- ¼ teaspoon red pepper flakes, optional
Instructions
- In a medium skillet over medium heat, cook the diced bacon until crispy, stirring occasionally. Line a plate with paper towels while the bacon cooks.
- Using a slotted spoon, transfer the cooked bacon to the paper towel-lined plate, leaving about ¼ cup of bacon grease in the skillet. Discard the rest carefully.
- Reduce heat to medium-low, add the diced onion, and cook until softened and starting to caramelize, stirring often.
- Add the finely diced pineapple to the skillet with the onion and cook until the pineapple releases its juices and softens, about 10 minutes, stirring frequently.
- Stir in the minced garlic and cook for about 30 seconds.
- Add the light brown sugar, apple cider vinegar, maple syrup, chili powder, kosher salt, and red pepper flakes (if using) and stir to combine.
- Return the cooked bacon to the skillet and mix everything together.
- Allow the mixture to simmer over low heat for 20 to 30 minutes, stirring occasionally, until it thickens to a jam-like consistency. If it's too loose, continue cooking until most of the liquid evaporates. The jam should be thick and glossy.
- Let cool slightly before serving; serve warm or refrigerate and gently reheat before using.
Notes
For a spicier kick, add more red pepper flakes according to your taste.
This jam pairs beautifully with crackers and cheese, or as a sandwich spread.
Store in an airtight container in the fridge for up to two weeks.
