Instructions
- Chill a small plate in the freezer before starting.
- In a large saucepan, combine chopped rhubarb, sugar, and lemon juice.
- Bring the mixture to a boil over medium-high heat while stirring often. Reduce the heat to maintain a steady boil for about 9 minutes until the mixture reaches a temperature close to 220°F.
- To check the doneness, drop a spoonful on the chilled plate. If it holds its shape when pushed, it’s ready.
- Remove from heat and stir in the vanilla extract.
- Let the jam cool completely on a wire rack for about 1 hour.
- Pour into clean jars and refrigerate for up to 1 week or freeze for longer storage.
