Description

Ingredients

  • 3 cups (375 grams) chopped rhubarb
  • 3/4 cup (150 grams) granulated sugar
  • 1 1/2 tablespoons lemon juice
  • 1 teaspoon vanilla extract

Instructions

  • Chill a small plate in the freezer before starting.
  • In a large saucepan, combine chopped rhubarb, sugar, and lemon juice.
  • Bring the mixture to a boil over medium-high heat while stirring often. Reduce the heat to maintain a steady boil for about 9 minutes until the mixture reaches a temperature close to 220°F.
  • To check the doneness, drop a spoonful on the chilled plate. If it holds its shape when pushed, it’s ready.
  • Remove from heat and stir in the vanilla extract.
  • Let the jam cool completely on a wire rack for about 1 hour.
  • Pour into clean jars and refrigerate for up to 1 week or freeze for longer storage.

Notes

For a different sweetness, consider using honey or maple syrup instead of sugar.
Ensure jars are sterilized before filling to extend shelf life.
