- 10g / 0.3 oz unsalted butter
- 1/2 cup cream , full fat
- 3 tbsp caster sugar (superfine white sugar)

Instructions

- Beat the cream in a separate bowl until stiff peaks form, ensuring not to over-whip.
- Add sugar to the egg whites and beat until firm peaks form.
