Ingredients

  • 1 lb smoked sausage beef or pork, sliced into rounds
  • 1 lb baby potatoes halved (or quartered if large)
  • 12 oz fresh green beans trimmed
  • 3 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried parsley
  • salt and pepper to taste
  • optional: ¼ teaspoon red pepper flakes for heat
  • optional garnish: fresh parsley or grated parmesan

Instructions

  • Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil for easy cleanup.
  • In a large bowl, toss the halved potatoes, green beans, and sliced sausage with olive oil, garlic powder, onion powder, paprika, parsley, salt, pepper, and red pepper flakes if using.
  • Spread the mixture evenly across the prepared baking sheet, ensuring everything is in a single layer for even roasting.
  • Bake for 30–35 minutes, flipping halfway through, until the potatoes are tender and golden, and the green beans are slightly crispy.
  • Serve hot, garnished with chopped parsley or a sprinkle of Parmesan if desired.

Notes

Feel free to substitute the sausage with your favorite type.
Add other vegetables like bell peppers or carrots for more variety.
