Ingredients

Scale
  • 1 1/2 lbs carrots
  • 1 1/2 cups water
  • 1/4 cup butter
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon garlic, minced
  • 1 tablespoon fresh herbs (like parsley, dill, or chives)

Instructions

  • Peel and slice the carrots into 1/2 inch thick pieces.
  • In a skillet, add water and carrots, cover, and cook for 5 minutes over medium heat.
  • Drain excess water, return the pan to heat, and add butter to melt.
  • Sprinkle in salt, pepper, and minced garlic; stir well and sauté for 5 minutes.
  • Finish with fresh herbs and sauté for another minute before serving.

Notes

Store leftover sautéed carrots in an airtight container for 3-4 days in the fridge.
Add a splash of lemon juice before serving for extra brightness.
For a sweeter option, mix in maple syrup or honey while sautéing.
