This Sheet Pan Gnocchi with Sausage and Veggies combines crispy gnocchi with juicy smoked sausage and colorful vegetables for a quick, comforting dinner any night of the week.

- 1 bag shelf-stable gnocchi (uncooked)
- 1/2 yellow onion (thinly sliced)
- 2 cups bell peppers (thin strips)
- 2 zucchini (chopped)
- 4 smoked sausages (sliced)
- 3 Tbsp olive oil
- 1 Tbsp Italian seasoning
- 1 tsp salt
- 1 tsp black pepper (or to taste)
- Grated parmesan (optional)
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, mix uncooked gnocchi, sliced onion, bell peppers, zucchini, and sliced sausages.
- Drizzle with olive oil and sprinkle Italian seasoning, salt, and pepper, then toss until coated.
- Spread the mixture in a single layer on the baking sheet and roast for 25 minutes, stirring halfway through.
- Remove from the oven, sprinkle with grated parmesan, and serve warm.
Notes
Adjust seasoning to taste if using salty sausage.
For a gluten-free option, use gluten-free gnocchi.
Add additional vegetables as desired for variety.
