  • ½ cup olive oil
  • ¼ cup balsamic vinegar
  • 1 tablespoon lemon juice
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon worcestershire sauce
  • ¼ cup honey
  • 1 tablespoon dijon mustard
  • 1 teaspoon italian seasoning
  • ½ teaspoon onion powder
  • 2 cloves garlic, peeled and smashed
  • ½ teaspoon ground black pepper
  • 2 pounds boneless skinless chicken breasts (about 67 pieces)

Instructions

  1. In a bowl, whisk together olive oil, balsamic vinegar, lemon juice, soy sauce, worcestershire sauce, honey, dijon mustard, italian seasoning, onion powder, and black pepper. Add smashed garlic cloves to the mixture.
  2. Transfer chicken breasts into a large gallon-sized bag. Use a rolling pin to pound the chicken to an even thickness. Pour the marinade over the chicken, seal the bag, and refrigerate for at least 4 hours or overnight.
  3. Preheat your oven to 400°F (200°C). Remove the chicken from the refrigerator and place it in a baking pan coated with nonstick spray. Allow chicken to reach room temperature while the oven heats up, then discard the marinade.
  4. Bake the chicken for 35-45 minutes, or until the thickest part of the breast reaches 165°F on a meat thermometer. Cooking time may vary based on thickness.
  5. For grilling, preheat the grill to 400°F (200°C) and spray with nonstick grill spray. Grill the chicken for 5 minutes on each side with the grill lid open, then close the lid and monitor closely to avoid flare-ups, cooking until the internal temperature reaches 165°F.
  6. Let the chicken rest for at least 10 minutes before slicing.

Notes

Marinating the chicken overnight can enhance the flavor further.
