- 2 tablespoons butter
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 1/2 cups frozen chopped spinach, thawed and drained
- 1/2 cup fresh parsley, finely chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup parmesan cheese, grated
- 2 large eggs, divided
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 1 (10×15-inch) sheet puff pastry, thawed
Instructions
- Preheat oven to 375°F and grease a muffin pan.
- Thaw and drain spinach, squeezing out excess moisture.
- In a saucepan, melt butter, sauté onion and garlic until fragrant, then add spinach and cook until moisture evaporates.
- In a bowl, mix cooked spinach with parsley, feta, parmesan, one egg, salt, and pepper; chill for 10 mins.
- Roll out puff pastry and cut into rectangles.
- Press pastry into muffin cups, fill with spinach mixture, and fold pastry corners over.
- Brush with egg wash and bake for 25-30 minutes until golden.
- Allow to cool slightly before serving.
Notes
For added flavor, consider using fresh herbs.
Ensure spinach is completely drained to prevent sogginess in the pastry.
